Quicktime Pro, a powerful editor
Quicktime Pro lets you open and edit mp3 files, but the handling is not very intuitive and precise, despite the fact the software is from Apple. To buy Quicktime Pro you simply register online for $30 and that will set your basic Quicktime installation from regular to pro.
Another way to edit mp3's is Felttip's Sound Studio, (www.felttip.com/products/soundstudio/) a small software tool that's suitable for all audio editing. It can also record directly to the hard disk and is using AIF as native format. I use it to convert and resample sound files from 22 to 44 kps.
Sound Studio can import mp3's using the Quicktime engine without having to register Quicktime Pro. It lets you edit audio more precisely as you see in the audio wave where to set your marker.
